We meet at 8am at the Second Circle end of Rainbow Street and taxi down to Souk el-Khodra, where the wholesalers have been working since five. It is not a photogenic market - wet concrete, diesel, men shouting prices over crates - and we go because that is where the aubergines cost 40 piastres and Rana can tell by touch which cauliflower will hold together in the pot. We buy for the day, carry it back up the hill, and cook: aubergine sliced and salted, chicken browned with seven spices, rice layered into a pot that has never once been non-stick. The flip is the point. You do it yourself, over the sink, and if it collapses we eat it anyway. Lunch lands on the family table around half twelve with laban, salad and more bread than anyone needs. Two things worth knowing before you book. The flat is a third-floor walk-up, 46 stone steps, no lift. And in July and August the kitchen runs at about 34C with four gas rings going - there is a fan, and you will still sweat through your shirt.

Knafeh in Amman that has ruined every other knafeh for me. Ate it standing on the pavement off a paper plate, which is apparently the correct way.

We are three generations in one kitchen on the third floor of a 1960s house off Second Circle in Jabal Amman. Sitti Nawal is 84 and still rolls warak enab faster than her daughters. Rana and Suha do the arguing about how much samneh is too much. Leen translates, badly, on purpose. We are not a cooking school and there are no aprons with our name on them - you stand at our counter, you cook lunch, and you eat it at the table with whoever else is home that day. Most sessions start early at Souk el-Khodra with a shopping list and an empty crate. Come hungry and leave the afternoon free.

Good introduction to Jordanian home cooking and the price is fair. Getting to the house involved a steep walk nobody had mentioned.

Excellent food and plenty of it. The cooking element was more watching than doing - I'd expected to be more hands-on.

Ate mansaf properly for the first time - right hand, standing up, no cutlery, someone correcting my technique. The jameed sauce is tart in a way the restaurant version never is.
